The Environmental Impact of Upcycled Foods

For decades, the global focus has solely been on the cashew nut. Meanwhile, the nutrient-dense, fiber-rich cashew apple—making up the vast majority of the fruit’s weight—has been left behind in the fields.

At KoroSho Craft, we realized that true sustainability means looking at the whole picture. Upcycled food is the practice of elevating ingredients that would otherwise slip through the cracks of our food system. By rescuing the cashew apple, we are not only preventing methane emissions from rotting fruit but also creating an entirely new revenue stream for local Tanzanian farmers.

The future of food is circular, and the cashew apple is just the beginning.
